Reporting to the venue and operations management, you'll be responsible for the day-to-day running of a busy, high-volume Thai kitchen — leading the team, maintaining quality and consistency, and keeping operations running smoothly and profitably.Responsibilities
- Oversee daily kitchen operations, service flow, and food quality across all sections
- Lead, roster, and train kitchen staff to maintain performance and consistency
- Manage food ordering, stock control, and supplier relationships to control costs and minimise waste
- Ensure full compliance with food safety, hygiene (HACCP), and WHS standards
- Maintain authentic Thai recipes, techniques, and presentation standards
- Monitor kitchen costs, portion control, and margins in line with targets
- Work closely with front-of-house and management to deliver a seamless guest experience
About you
- Proven experience as a Kitchen Manager, Head Chef, or Sous Chef in a busy restaurant
- Strong knowledge of authentic Thai cuisine, ingredients, and cooking techniques
- Thai language skills are an advantage, as the role involves communicating with Thai-speaking kitchen staff and maintaining authentic recipes
- Solid leadership, rostering, and team-management skills
- Sound understanding of food safety, stock control, and cost management
- Ability to thrive in a fast-paced, high-volume environment
