We are seeking an experienced and highly motivated Sous Chef to join our dynamic kitchen team. Working directly under the Head Chef, the successful candidate will play a key role in the day-to-day operation of a busy buffet kitchen, ensuring exceptional food quality, consistency, and service standards in a fast-paced, high-pressure environment.The Sous Chef will assist in leading and supervising the kitchen team, maintaining food safety compliance, managing production schedules, and ensuring smooth service during high-volume meal periods.Key Responsibilities
  • Support the Head Chef in the daily management and operation of the buffet kitchen.
  • Lead, motivate, and supervise kitchen staff to ensure efficient and professional service.
  • Oversee food preparation, cooking, presentation, and replenishment of buffet offerings.
  • Maintain high standards of food quality, consistency, and portion control.
  • Monitor stock levels, assist with ordering, inventory management, and stock rotation.
  • Ensure strict compliance with food safety, hygiene, and workplace health and safety regulations.
  • Assist with menu planning, recipe development, and seasonal menu updates.
  • Train, mentor, and develop junior chefs and kitchen assistants.
  • Coordinate kitchen operations during peak service periods and manage workflow effectively under pressure.
  • Minimise food waste and contribute to cost-control initiatives.
  • Step into the Head Chef's role when required, ensuring continuity of kitchen operations.

Skills and Experience
  • Proven experience as a Sous Chef or Senior Chef in a high-volume buffet, hotel, resort, club, or large-scale catering environment.
  • Strong leadership and team management skills.
  • Ability to work effectively in a fast-paced, high-pressure environment while maintaining attention to detail.
  • Excellent knowledge of food preparation techniques, kitchen operations, and food safety standards.
  • Experience managing large-scale food production and service.
  • Strong organisational, communication, and problem-solving abilities.
  • Ability to multitask and prioritise workloads during busy service periods.
  • Relevant culinary qualifications and food safety certifications.
